Mean Green Soup
This deliciously creamy, revitalizing soup is jam-packed with hearty and incredibly tasty veggies!
INGREDIENTS
- 5 cups water
- 4 med-size potatoes, chopped
- 1 large carrot, diced
- 4 Celery ribs, diced
- 1/2 large onion, diced
- 4 cloves garlic, chopped
- 1 cup collard leaves, chopped
- 3 cups of kale, chopped
- ¼ cup cilantro, chopped
- 1 (inch) fresh ginger, minced
INSTRUCTIONS
In a pot over med. heat, cook onion and garlic in 4 Tbsp. water for 2-3 min.
Add carrots, celery and potatoes and the rest of the water.
Bring to a boil, keeping on med. heat and stirring frequently.
Cook for about 10 min. Add collard greens, kale, cilantro and cumin.
Cook on low heat for another 15 minutes.
Blend with an immersion blender until smooth.
Prep time: 15 minutes - Cook time - 30 minutes
