Carob & Beetroot Cake

Moist and delectable alternative to chocolate cake with a healthy twist.

 

Ingredients:

Mix together:

1 c Cocount Sugar

1 c Coconut Oil or light vegetable oil

1 c Milk

1 c Beetroot – cooked & Grated (must yield 1 cup after being grated)

1 t Vanilla extract

Sift together:

1 ½ c All purpose flour

½ c Chickpea flour

½ c Carob powder

4 t Baking Powder

1 t Baking Soda

1/8 t Salt

Mix the dry and wet ingredients together with an electric mixer.

Pour into an 8 inch cake pan that is greased.

Bake at 350°F for 40 minutes.

Make sure it is baked by inserting a toothpick to test that it is cooked.

Allow to cool completely.

Dust cake with confectionars sugar
