Carin’s Chocolaty Chunky Carob Candy Clusters
These are sure to be popular with the kids as well as the grownups! A delicious and healthy treat.
Carin’s Chocolaty Chunky Carob Candy Clusters
Ingredients:
- 2 Cups of Carob Chips
- 1 Cup Peanut Butter
- 1 Cup Raisins
- 1 Cup chopped peanuts
- ½ Cup Shredded, unsweetened coconut, divided
Method:
Melt the carob chips and peanut butter in a heavy bottom saucepan. Remove from heat and stir in the raisins, peanuts and ¼ cup shredded coconut.
Spread in a 9 x 9 inch parchment paper-lined baking dish or mini cupcake tins with liners. Top with remaining shredded coconut.
Refrigerate for at least 20 minutes. Remove from parchment paper and cut into squares or serve in cupcake liners.
Store in Ziploc bag in freezer.
